Choosing the Right Exhaust System 

There are two main types of commercial kitchen exhaust systems in Southern Maryland, known as type 1 and type 2. Type 1 systems are designed for grease removal, while type 2 systems are intended only for kitchens without grills or fryers and that produce no grease. Most restaurants and commercial kitchens are required to have type 2 systems to safely handle grease removal, including those with deep fat fryers, grills, barbecues, rotisseries, or other equipment that produces grease.
